INGREDIENTS
500g organic chicken mince
- 1½ cups almond meal
- ½ cup coconut flour
- 4 heaped tbsp Unflavoured Collagen Protein
- 60g Chief Carnivore Biltong
- 2 jalapeños, finely diced & seeds removed [optional]
- 1 eschallot, finely diced
- 6 organic eggs
- ½ cup pecorino, grated (or cheese of choice)
- 1 tbsp garlic & herb seasoning
- Sea salt + black pepper to taste

METHOD
Preheat oven to 200°C (fan-forced). Line a tray with baking paper. - Cook mince: Sauté eschallot in a little oil for 1–2 minutes. Add chicken mince and cook 5–7 minutes until cooked through. Cool slightly and drain excess liquid.
- Mix: In a large bowl, whisk eggs. Stir in cheese, jalapeños, biltong, and cooled chicken. Fold through almond meal, coconut flour, collagen, seasoning, salt and pepper until just combined.
- Shape: Scoop into 9 portions, gently shaping with damp hands.
- Bake 15 minutes or until firm and lightly golden. Cool completely.
